2006 Sebeka® Cabernet-Pinotage

Sebeka South Africa Cabernet-Pinotage is a fruit-driven wine that features the blackberry, currant and herbal notes typical of Cabernet along with red fruit, acidity and smoky earth notes typical of Pinotage, the national grape of South Africa. In 1925, Stellenbosch University developed the Pinotage grape, a cross of Pinot Noir and Cinsault, as the grape most suitable for South African terroir. This well-balanced, deep crimson wine pairs well with a wide variety of rich foods. It is best enjoyed within two years of release.

The harmonious 2006 Sebeka South Africa Cabernet-Pinotage is crafted from grapes from South Africa’s finest vineyard districts located across the Western Cape. The most attractive Cabernet and Pinotage grapes were carefully hand picked and gently de-stemmed. To elicit a bright taste and retain bold fruit flavors, the grapes were then crushed, pressed and fermented separately in upright stainless steel tanks. The juice was allowed ten days of fermentation at 22-25°C. Subsequently, it spent five days macerating on the skins to intensify color and flavor. After undergoing malolactic fermentation, the grape odor became richer and more vinous while achieving a mellow, full-bodied, and buttery taste. To further perfect the process, Blake tasted the final wines and blended 64% Cabernet Sauvignon with 36% Pinotage, creating a deeply rich and intense wine.
