2006 Sebeka® Chardonnay

Sebeka South Africa Chardonnay is a fruit-driven New World style wine featuring layers of fresh citrus, apples, and peaches accented with hints of vanilla on the finish. This well-balanced wine has a slightly creamy texture. The wine’s bouquet and distinct, but delicate aroma characterizes the wine’s intricacy yet approachable flavor. In 2006, it scored highly in Anthony Dias Blue’s The Tasting Panel. Sebeka Chardonnay is a wine of great personality; it is best enjoyed within one year of release.

The most-favorable Chardonnay grapes were hand harvested and gently de-stemmed to create the 2006 Sebeka South Africa Chardonnay. They were crushed, pressed, and settled overnight. Each lot fermented in upright stainless steel tanks, retaining the intense fruit flavors of grapes and producing a wine with a clean, balanced structure. To evoke mineral tinges, the juice was allowed a slow fermentation of three weeks at 16-18°C. Approximately 35% of the wine underwent malolactic fermentation, making 35% of the wine’s texture smoother and richer; it was added to the remaining rounder, fuller wine to create a more sophisticated blend. Additionally, Blake tasted the final wines and mixed a small percentage of Chenin Blanc, Viognier, and Semillon to enhance the complexity of the finished wine.
