For the 2006 Sebeka South Africa Sauvignon Blanc, the best Sauvignon Blanc grapes were thoughtfully hand-picked and de-stemmed; they were then crushed, pressed and allowed to settle overnight. To retain a crisp structure, the natural acidity of the grapes, and evoke vivacious fruit characteristics, each lot was fermented in upright steel tanks. The juice was allowed a slow fermentation over three weeks at a cool temperature, 14-18°C, to further enhance it with tropical fruit and mineral flavors.
